3-10 More Rain and More Brisket

It was another day of drizzle so we stayed at home. Last week when we went grocery shopping we picked up another brisket. These things are quite large, this one was about 11 lbs and since we are still working on learning how to smoke brisket correctly and there are only two of us I cut it into quarters. Yesterday I took a piece of it out of the freezer so it could thaw. This morning Larry woke up early and started smoking the brisket. All day he worked to keep the temperature at 225. After smoking the brisket for six and a half hours the meat thermometer registered that the brisket was done so he took it off the grill and cut a piece off it. It tasted good but it was a bit tough so he put it back on the grill. After another hour he removed it being afraid that if he kept it on any longer it would dry out. The brisket was still a little tough. We know that it should have cooked longer but the only way to do that is to cook at a lower temperature and that will be difficult, we are only using one burner of the grill and we have it at it's lowest setting, even with that we have to crack open the lid. Larry thinks that it will take about ten hours to smoke the brisket correctly. While Larry was smoking the brisket I worked on my book.


We were going to go square dancing in Gatesville with the Coryell County Squares but the rain was still moving around so we stayed home. We streamed a couple of programs. We enjoy watching detective serious and every so often Larry searches on Amazon to see what is new. Last year he found a detective serious called Bosch available that we watched. A couple of days ago Larry found out that on Friday Amazon was releasing the second season of Bosch so tonight we watched the last episode of last season to refresh our memory. Now we're ready to watch the next season. The other program we watched was an episode of The New Yorker. Amazon introduced us to The New Yorker awhile back by putting one episode up. Larry saw that a lot more episodes were added so we watched the second episode. This episode had three short stories, the first story was The Ride of Their Lives, which was about children riding bulls. The second story was The Death of Atlantic City, which was about the closing of the Revel casino. The third story was Black Bodies in Motion and in Pain, which was an essay about racist violence and illustrates it through art. We enjoyed watching the stories.
