7-9 Ice Cream, Ice Cream, We all Love Ice Cream

Monday, when we celebrated Fourth of July at LuAnn's and Dalbert's a couple of our friends brought homemade ice cream so Larry thought it would be a good idea to make some at home. When we went grocery shopping this week we picked up the ingredients. When I got up this morning I made pancakes for breakfast and afterwards I made a batch of ice cream. I started out by mixing 2 boxes of Junket Vanilla Ice Cream mix, 2 cups of Half and Half and 2 cups of Whipping Cream. Once the ingredients were mixed I chilled the mixture for 30 minutes. Then the fun began. I followed the directions for the machine with rock salt, water and ice. It took the machine 30 minutes to make the ice cream. Once the ice cream was complete the machine turned off. The last step was putting the ice cream in a bowl and putting it in the freezer to harden. We thought we had enough ice cream mix for two batches but each batch needs two boxes of the mix. We went back to the store and bought chocolate ice cream mix and a small can of cashews, using some miniature marshmallows left over from when I made the S'mores Pudding Dessert we decided to make Rocky Road ice cream.

In the afternoon I worked on my puzzle and vacuumed the house while Larry finished another book and worked on his Air Spring Project for the Minnie. In the evening we watched a couple documentaries (Carpet Racers: A Crash Course and One Wall: Kings of Coney Island). Carpet Racers: A Crash Course was about racing radio control car racing, it was a good documentary. It brought back memories from when Larry and I raced RC cars. One Wall: Kings of Coney Island was about playing handball. It was very interesting to learn how popular handball was and how competitive it still is. For our dessert we tried both the Rocky Road and Vanilla ice cream. They both came out great. We had a very good day.
